Cherry Cobbler (Egg & Dairy-free)

Makes 6 to 8 Servings

Cherry Filling
- 1 cup granulated sugar
- 1 1/2 tablespoons cornstarch
- 1 3/4 pounds sour cherries, washed and pitted
- 1 tablespoon cherry or almond liqueur or 1 1/2 teaspoons almond extract
- 1/4 teaspoon allspice
- 1/4 teaspoon cinnamon

Topping
- 1 1/2 teaspoons Ener-G Egg Replacer (found at most health food stores)
- 2 tablespoons water
- 1 1/4 cups all purpose flour
- 1/4 cup plus 2 tablespoons granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons cold dairy-free margarine, cut up into 1/2 inch pieces
- 2/3 cup milk substitute
- 1/2 teaspoon vanilla
- Vegetable oil spray
Preheat oven to 375 degrees. Position oven rack in middle of the oven. Spray a 2 quart casserole dish with the vegetable oil spray.

Filling
- In a 2 quart saucepan whisk together 1 cup of sugar and 1 1/2
tablespoons of cornstarch. Add the cherries and bring to a boil over
medium heat, stirring constantly. Turn heat to medium low and simmer for
1 minute. Remove from heat and stir in the cherry or almond liqueur or
the almond extract, allspice and the cinnamon. Pour into the prepared
dish.

Topping
- Prepare the topping. In a small bowl whisk together the egg replacer and water until frothy and thickened. Set aside.
- In a medium size bowl combine the flour, 1/4 cup of the sugar, baking powder and salt, whisk to mix. Add in the margarine and with a pastry blender or two knives cut in the margarine until coarse crumbs form. Stir into the egg replacer mixture the milk substitute and vanilla; pour this mixture into the flour mixture and stir until just combined.
- Drop the dough by spoonfuls over the cherries. Sprinkle the top with
the 2 tablespoons of sugar. Place in the preheated 375 degree oven and
bake until golden brown and filling is bubbling. Remove from oven and
let stand for 5 minutes before serving. Good with dairy-free whipped
topping or vanilla frozen dessert.
Note: If desired, add 1/3 cup crushed sliced almonds to the topping or sprinkle over the topping and filling before baking.
